Originalmente é um queijo típico dos estados do nordeste brasileiro. O Queijo Coalho é o queijo mais consumido no norte e no nordeste do Brasil, sendo uma das maiores expressões da cultura nordestina. Diferentemente de como é consumido nos estados do sul e sudeste do país, no norte e nordeste, ele é consumido na mesa do café da manhã, como tira gosto na mesa do bar ou em comidas típicas, como o Baião de Dois.

Quanto à tecnologia emprega analisada com um olhar técnico podemos ressaltar vários pontos importantes. Como exemplo, este queijo originalmente é feito de leite cru, o que vai garantir o seu sabor, aroma, consistência , textura, etc; mas descreveremos a técnica com uso de leite pasteurizado. Outro ponto importante é não adicionar fermento que produz acidez, portanto, abaixo descreveremos a tecnologia empregada com leite pasteurizado. 

A fabricação deste queijo para comercialização deve atender as exigências sanitárias, ou seja, deve ser feito com leite pasteurizado.


Ingredientes

100 litros de leite de vaca acidez máxima 17ºD;
01 fermento Bioprotetor para 100 litros (pode ser conferido aqui);
40 ml de cloreto de cálcio (pode ser conferido aqui);
6 ml de coagulante super concentrado (pode ser conferido aqui);

Tecnologia de fabricação

Algumas tecnologias utilizam leite padronizado a 2,8 a 3,0% de gordura, e outros utilizam o leite integral. Para fabricar o queijo de coalho, pasteurize o leite a 75ºC por 15 segundos ou 65ºC por 30 minutos. Resfrie a 35ºC e adicione o Bioprotetor. O bioprotetor ajuda a proteger o queijo contra bactérias acidificantes e ou contaminantes. ados 30 minutos de adicionado o Bioprotetor, adicione o cloreto de cálcio e o coagulante. Espere a coagulação por 30 a 40 minutos. 

Corte a massa fazendo grãos de 1,0 cm de aresta. Mexa por 10 minutos, bem devagar, para não ocorrer perdas de finos no soro. ados os 10 minutos, inicie um aquecimento até 45ºC.  Mexa por mais alguns minutos até o ponto.

Ponto da massa: Dê o ponto após 15 a 20 minutos do inicio da segunda (2ª) mexedura. Junte a massa na parte anterior do tanque, retire 1/3 do soro e coloque o sal. Coloque 1,2 quilos de sal em 100 litros. Faça a pré-prensagem por 10 a 15 minutos a após começe a prensagem.

Prensagem: Corte em blocos e coloque nas formas próprias com dessorador. Vire o queijo depois de 30 minutos de prensagem. Vire estes queijos na forma e deixe por mais 30 minutos.  Depois tire o dessorador e leve o queijo para câmara fria dentro das formas. Quando o queijo estiver frio, retire-o das formas e deixe secar por 3 a 5 dias antes de embalar.
