La producción del mercado de los lácteos en EE.UU. ha visto un aumento general año tras año, con ligeros descensos en la producción de algunos quesos y leche en polvo, según el último informe de lácteos del Departamento de Agricultura de EE.UU. (USDA, por sus siglas en Inglés).
La producción total de mantequilla de EE.UU. en agosto fue de 133 millones de libras, 31% por encima del mismo mes el año pasado, pero 1,6% por debajo de julio de 2011; la producción total de queso, por otro lado, fue de 868 millones de libras -el 0,3% menos que en agosto de 2010, pero un 1,5% por encima de julio de 2011.
La producción de queso estilo italiano ascendió a 364 millones de libras, 0,2% por debajo de agosto 2010, pero 0,6% por encima de julio de 2011; mientras tanto, la producción de queso estilo americano sumó 347 millones de libras, el 1% por debajo de agosto de 2010 y 0,9% por debajo de julio de 2011.
La producción de leche seca sin grasa fue de 113 millones de libras en agosto, con una caída del 5,1% con respecto a agosto de 2010, mientras que la producción de leche desnatada en polvo fue de 38.7 millones de libras, con un aumento de 156,6%.
La producción de suero en polvo ascendió a 79.8 millones de libras, con un descenso del 2,1%; la producción de lactosa fue de 82.9Mlb, con un aumento de 3,4%, y la producción de concentrado de proteína de suero fue de 35.6Mlb, un 1,2%.
La producción de helado natural fue de 77,4 millones de galones en agosto, un 4,7% más respecto al año anterior, mientras que la producción de helados bajos en grasa aumentó un 8,4% a 40,9 millones de galones.
