El tema de los sólidos en la leche cada vez toma mayor importancia, de cada 100 litros de leche que se producen sólo entre 8 y 14 % de sólidos totales, el resto es solo agua, cuando hoy se paga por kilos de sólido y no por litros de leche.
En lo que es el valor internacional del producto los remates de Fonterra que son uno de los principales indicadores, con algunas oscilaciones marcan un padrón de valor de la leche. Valor de la leche que tiene hoy para el productor un problema bastante importante como es el de los costos de producción.
La solución para mejorar esa ecuación es mirando desde las porteras para adentro. La fórmula es difícil de descubrir pero dando concentrados a los animales con mucha suerte se pueda empatar, hay que tratar de cosechar más leche de forma pastoril y con reservas pastoriles. Hoy hay varios tambos que la base de su producción es pastoril, y no se preocupan más por hacer reservas de granos, comprándolos de forma muy puntual y cuando realmente se necesitan.
Esos tambos tienen como base de producción silopack y silos tradicionales en bolsa o trinchera a base solo de pasto con pequeñas dosis de concentrados específicos que buscan alimentar mejor a las vacas en lo que son las proteínas.
Son tambos que producen muy buena cantidad de sólidos por hectárea, que tienen un número importante de vacas por hectárea, oscilando en el eje de las 2 unidades ganaderas y produciendo 900.000 kilos de sólidos por hectárea que hacen que los números den diferentes.
Si das entre 7 a 9 kilos de ración estás precisando entre 8 a 10 litros de leche de producción para pagar esa ración, si son 15 kilos de silo tienen un costo de entre 4 a 6 litros de leche, si se pastorean en una pradera el costo es de unos 3 a 5 litros de leche, y el costo de la cosecha de la leche que anda entre 4 a 6 litros de leche.
En el mejor de los casos el costo de producción es de19 litros de leche y en el peor de ellos ese costo ascendería hasta 26 litros.
Como se combate porteras adentro esos altos costos, con los ejemplos que dimos arriba que se están haciendo en distintos puntos del país, hay que empezar a darse cuenta que la realidad del mundo es ésta, que cada vez vamos a ser más dependientes del exterior y que habrá que tomar ejemplos de otros países, reconvertirse y bajar costos para que la empresa sea rentable.
Un debe que tiene hoy la lechería es en la parte de extensión, es muy fácil diagnosticar los problemas y brindar las soluciones pero para que ellas se lleven adelante se necesitan técnicos que ayuden a los productores a realizarlas. Luis Dante/Todoelcampo
